yes worms are like fish, as long as they have space and food they will keep breeding, so adding extra trays will help
The thin red worms are 'red worms' and are also used for composting - you should have had some with your initial batch when you received your wormery.
red worms natural habitat is manure so no problems there.
it does take time for liquid to appear in the sump, and the amount depends on what goes in...
if the wormery uses high water content foods like cucumber - melon, then more liquid will be produced than in a dog poo wormery, where the waste is quite solid.
