Sorry about the delay in replying...

A wormery should not smell like smelly socks , it should smell like dirt.

I am guessing that the wormery has got too hot and the worms escaped as the food rots, not composts.

You dont mention how long you have had the wormery for, however you are doing the correct measures to rectify the situation by adding shredded paper, sawdust and turning the mixture over this gets air into the system - cardboard is especially good for this.
Do not give them any more food, until what you have has been eaten.
The wormery should be damp, as it states in the instructions 'damp like a squeezed out sponge'
