Sorry about the delay in replying
generally worms only escape in the first few days, simply because most wormeries when they are first set up are a very sterile environment.
i.e they don't have any bacterias, fungi, nematodes etc that make the worms feel at home.

Firstly, always add some used compost or garden soil into the bedding, this will contain all the microorganisms that worms like.
If nothing is available simply make the wormery up in advance and leave with a small amount of food in it, the microorganisms will move in by themselves.

If the worms are in a new wormery, its a good idea to put it in a bin liner or sack, so that any worms that do escape end up in the binliner and can be scooped back into the wormery.
You should only need to do this at night time when the worms are most active, and hopefully in a few days your worms will settle down into their new home
