Hi Michael

Sounds as if tou are doing everything correctly at the moment.

Yes they will eat all the coir, which is why it seems like they aren't eating anything.

Also as Bok mentioned, you should only have one composting tray in action. the empty remaining trays come in gradually over the next few months.
When they do eventually get used, you will need to cover the food with paper.

Don't worry too much about worms going into the sump, when you get more layers on it won't happen so much. The worms are just investigating.

Hi
when the tray you are using becomes 3/4 full, then add the next tray on top.
Try and reach down to the bottom of your original tray, and put some of the compost into the new tray, this will encourage the worms to move, and infiltrate the new waste wit bacteria etc

It does take time, but the food is now starting to break up

I've seen this blog. Worms are nasty for peoples. People can always feel worse when they see insects. I'm afraid of insects and use https://www.essaywritinglab.co.uk/do-my-assignment/ to finish the task. Wormery boxes are a very helpful thing in getting rid of insects.
