hi
all you need to do is dig to the very bottom of the 1st tray and take some of the black compost from the bottom
this is vermicompost and can be placed into the bottom of the next tray - it will give the worms familiar territory to move into, then start adding food waste slowly to the new tray.
Your worms will finish eating the food in the bottom tray, and will start to move upwards into the new tray.
