Hi
You only need a small trowel full of soil at the beginning - this is simply to innoculate the wormery, and get some good bacteria and creatures into the mixture, to make your worms feel at home.
Your worms will eat all the coir block bedding - it is there for initial bedding only - when you start adding the next trays, simply use some shredded paper / cardboard and add some of the vermicompost (the black stuff) from the very botton of the lowest tray, this will encourage the worms to venture upwards into familier bedding and territory
