Having 3 composting trays means that you can compost lots more waste, as you can have worms working on 3 levels.
Simply start with the sump and one tray, add your worms and kitchen leftovers, then when full add the second, and finally the third tray. When the bottom tray is fully composted- simply remove it, empty the compost and replace back onto the very top. Your worms will multiply quickly to fill the space available.
Each composting tray sits inside the lower one, so that they are constantly resting on the contents below. This allows the worms to migrate easily through the mesh bases of each tray into the upper trays - Sump with tap (for easy removal of the liquid) measuring 40cm x 60cm x 20cm deep
